Chicken Caesar Wrap
It was Gary’s Birthday this past weekend and we had to postpone his lunch plans in Old Town Temecula. Truth is we went to Pechanga and partied with friends the evening before his B-Day and we weren’t feeling too hot the next day. I offered to pick him up some lunch and he requested I make “Chicken Caesar Wraps”. At first I wasn’t too happy about having to go grocery shopping and make him food but I sucked it up because it was his Birthday and that’s what he wanted. So I pulled myself together and off I went.
Gary and I used to work at Red Robin and we still enjoy making some of our “Red Robin” favorites. And you can’t go wrong with chicken caesar wraps. It’s five simple ingredients and can be made in a matter of minutes especially if you buy pre-cooked chicken breast & pre-made salad mix.
I drove to Albertson’s because it is the closest grocery store. I stopped by the deli for four rotisserie chicken breasts. I probably only needed three but I don’t like odd numbers and I wanted to make sure I would have extra. Albertson’s carries a large bag of caesar salad romaine lettuce mix for $5. My husband and I are big fans of Lighthouse dressings so I also picked up a bottle of Caesar Dressing. Of course you can use any caesar dressing. Next, I picked up Spinach Tortillas. They carry larger Spinach Tortillas at Winco for around $4 or $5. I believe there is 8 or 10 in a pack. At Albertson’s they carry Mission Spinach Tortillas for $5 and they are smaller and have only 6 in a package. So not the biggest bang for your buck but I wasn’t feeling great so I was definitely not going to shop all around town. Last stop was the cheese section for shredded Parmesan Cheese and then off to check out.
I got home and made an assembly line of my items. I used two chicken breasts since the wraps were just for the two of us. And the chicken breasts were pretty good size. I pulled the chicken breast off the bone and shredded it into smaller pieces. I placed the chicken on a plate. I opened the Parmesan Cheese bag, the jar of Caesar Dressing, and the bag of Romaine Lettuce. I also like to use “Johnny’s Seasoning Salt”. My husband asked if we had an avocado and we did so he sliced up an avocado to have in his wrap.
“Little Trick” is to heat up the tortilla on the stove or in the microwave. It is important to heat up the tortillas or it will be hard to roll up the tortilla without it cracking or tearing. I used about two tablespoons of Caesar Dressing and spread it over the the Spinach Tortilla. I next added half of one chicken breast to the tortilla. I sprinkled a little bit of “Johnny’s Seasoning” over the chicken. I love CHEESE so I used extra Parmesan Cheese but you can use however much you want. To finish it off I added Romaine Lettuce. Keep in mind that you need to be able to roll up the tortilla. I used a handful of Romaine Lettuce. I rolled it up like a burrito and sliced it in half. We did not have a side to go with it but you can serve it with fruit or chips and there you go. A quick and simple meal ready in minutes!
We had left-over salad mix so I was able to make Caesar Salads as a side with our dinner the next evening. That way nothing went to waste.
Makes 6 wraps
1 Package of Spinach Tortillas (package of 6)
1 Jar of Caesar Dressing
2-4 Pre-Cooked Rotisserie Chicken Breasts Shredded
1 Small Package of Shredded Parmesan Cheese
1 Bag of Romaine Salad
Seasoning Salt (Optional)
Sliced Avocado (Optional)
Make an assembly line of the items. Tortillas, Caesar Dressing, Chicken, Seasoning Salt, Parmesan Cheese, and Romaine Lettuce.
Warm up the tortilla a bit just so it’s easy to roll
Spread Caesar Dressing over the tortilla
Add shredded chicken breast
Sprinkle Seasoning Salt on top of the chicken breast
Add 1-2 teaspoons of cheese
Add a handful of Romaine Lettuce Mix
Roll the tortilla up like a burrito and slice in half at a diagonal
